
Ingredients
- 1kg Chicken Thighs
- 1/2 jar Valcom Laksa Paste1 1/2 litres chicken stock. 400g Coconut Cream
- 1/2 of a cabbage (finely shredded)
- 2 med carrots (shredded)
- 1 tablespoon coconut oil
- 1/2 teaspoon of tamarind paste
- 1 tablespoon fish sauce
- 2 tablespoons lime juice
- 1 tablespoon stevia
- 1/2 Lebanese cucumber to garnish
- 2-3 spring onions to garnish
- Bamboo Shoots to garnish
Method
- Cook chicken in the air fryer, cover and rest.
- Add coconut oil to a heavy base pot. Add Laksa paste and cook for 3-5 mins to release the flavour, stirring to avoid burning.
- Add chicken stock, coconut cream, tamarind paste and bring to a simmer.
- Add sliced/diced cooked chicken,, cabbage and carrots and simmer for 5 mins.
- Add fish sauce, lime juice and stevia and simmer 5 mins and serve
- To serve add garnishes and enjoy.
