- *****ingredients for Lemongrass infused Vegetable Broth:
- 2 litre Vegetable Stock ( home made or store bought)
- 1/4 roughly chopped ginger
- 1/4 Valcom Lemongrass
- 1 clove garlic
- 1/4 cup Lee Kum Kee Soy Sauce

- ***Ramen Soup Ingredients :
- 4 pieces bok choy - cut in half ( equalling 8 pieces )
- 1 cup peeled /sliced carrot
- 1 cup button mushrooms - sliced then sauteed untill browned
- 1/2 cup edamame/ soy beans
- 4 whole boiled eggs / peeled ( boil for approx 6-7 mins)
- 1/4 cup chopped spring onion
- 4 pieces sliced radish
- 2 bundles Hakubaku organic Ramen noodles - boiled untill cooked

- *** Chilli Jam ingredients:
- 5 long red chillies
- 9 bird's eye chillies
- 3 cloves garlic
- 2 tbsp ground ginger
- 3 tbsp sesame oil
- 1/2 chopped white onion
- 1/4 cup rice wine vinegar
- 1/4 cup brown sugar
- **** Okra Karaage:
- 12 pieces fresh Okra
- 3 tbsp Soy Sauce
- 1/2 TSP minced ginger
- 1/2 TSP minced garlic
- 1/2 TSP minced shallots
- 1/2 cup corn starch
- 1/2 cup vegetable oil
- Salt & pepper to taste
- 2 pieces finely diced bird's eye chilli
Method
- *** For Lemongrass Infused Vegetable Broth : combine vegetable stock , lemongrass, ginger , garlic & Soy Sauce - summer for 10 mins , then strain broth through a sieve , keep warm until ready to serve.
- **"Assembling Ramen:
- Place strained Lemongrass infused Vegetable Broth in a pot on medium heat, add sliced carrots, boy choy simmer for 2 minutes before adding soybeans. Divide cooked Ramen noodles between four soup bowls , add Lemongrass infused Vegetable Broth along with bok choy, carrots & soybeans. Top each bowl with boiled egg, sauted mushrooms, sliced radish & chopped green onions. Serve with Chilli Jam on the side
- ****Chilli Jam: combine chillies , garlic , onion & ginger in food processor & pulse together untill finely chopped. In heavy bottomed sauce pan heat sesame oil , cook the chilli mixture untill most of the moisture has evaporated ( approx 10 mins ) , add brown sugar & rice wine vinegar, bring to the boil & simmer until sauce has thickened & is a deep red colour.
- ****Okra Karaage: cut Okra pieces into 1" lengths , place in a bowl along with , soy sauce, garlic, ginger & shallots - mix well untill all pieces of Okra are seasoned with mixture. Sprinkle Corn Starch , salt & pepper over Okra untill combined. Heat vegetable oil in large frying pan & add Okra pieces , shallow frying in the hot oil , rolling & turning the okra pieces to brown evenly all sides . Add sliced chilli when nearly finished cooking, then remove from oil and place on paper towel to absorb excess oil - serve while hot.
