
Ingredients
- Bao dough ingredients: * Tangzhong (see ingredients below)* 2tspn yeast* 2.5 tbsp milk powder* 3 tbsp white sugar* 1/4 cup oil* 360g flour* 2tsp baking powder* 1/2 tsp saltIngredients to make Tangzhong* 60 mL water ¼ cup* 60 mL milk ¼ cup* 23 g bread flour
- Chicken plus Marinade ingredients: * 500g chicken thigh cut into large bite size pieces* 2tbsp chopped lemongrass* 2 tbsp red capsicum chopped* 1 tbsp lemon juice* 1 tbsp oil* 4 tbsp fish sauce* 1 tbsp brown sugar
- Ingredients for Bao toppings:* Pickled sliced purple cabbage * 2 Spring onion cut to about 10cm* 1 Lebanese Cucumber cut into sticks lengthwise* 1 Carrot shredded* 1/2 cup Kewpie mayonnaise * 2tsp Sriracha sauce* 2 sliced red chilli
Method
- Making Tangzhong:* Place the water in a small saucepan and heat over medium heat. * Add the flour and whisk until the mix has no lumps. * Add the rest of the milk and whisk constantly over medium heat until the mixture thickens to pudding like consistency. * Transfer to a bowl to cool to room temp. Cover with plastic wrap to avoid a skin forming.Making bao dough: * In a bread maker, add the room temperature Tangzhong, yeast, water, milk powder, oil, sugar, baking powder and mix. * Once mixed add the flour and salt and set to run on a dough setting.* Knock down dough and then roll out to 1cm. Spray with cooking oil. * Use a cup about 8cm diameter to cut out circles in the dough. * Place on baking paper squares and fold over to make semicircle shape. Press down on semicircle gently. * Allow to rise for 30 min* Place in steamer over medium heat and steam for 12 min
- Method for making air fried lemongrass chicken bites:* Mix all marinade ingredients and chicken then let marinade preferably overnight* Spray with oil and cook in the airfryer at 200C for 8-10 min. You may need to do this in batches.
- Method to prepare baos:* Mix kewpie mayonnaise with sriracha sauce* Split steamed bao and inside spread some spicy kewpie. * Place the chicken pieces, spring onion, cucumber, carrot and pickled cabbage inside the bao and top with more kewpie and sliced chilli on top. * Enjoy!
