
Ingredients
- 1 tbs ABC Sweet Soy
- 1 tbs Light Soy Sauce
- 1 tbs Mirin
- 2 tsp Sesame Oil
- 1/4 cup Vegetable Oil
- 6 Clove Garlic, chopped or minced
- 1 small Red Capsicum, diced
- 1 Carrot, diced
- 2 Spring Onion, sliced. Keep white and green part separate
- 1/4 cup Corn Kernels
- 1 cup Green Beans, cut into 2cm pieces or frozen chopped
- 1/2 cup Brocoli, chopped
- 2 large Eggs. Extra for serving optional
- 300g left over Beef Rib, or other meat/tofu, chopped
- 2 cup cooked leftover Rice
- 1/4 tsp Chinese 5 Spice
- 1 tsp Salt flakes
- Optional, Sesame Seeds, Fried Shallots, Kewpie, Siracha for toppings
Method
- Mix Soy sauces, sesame oil and mirin together. In veg oil fry garlic till golden and strain into heat proof bowl. Heat 2 tbs garlic oil in wok or pan, fry off vegetables (exept green parts of spring onion) till softened. Push to the sides of the pan by making a hole through the middle. Give eggs a quick whisk and pour them into the gap in the middle of the pan, mix till cooked, you'll catch some vegetables but that's fine. Once egg is cooked mix everything in the pan, then set aside in a bowl with green parts of spring onions.Wipe pan out, add some more garlic oil and put the meat in. Heat through, get some parts crispy if you can. Add cooked rice to heat through. Add back in veg, fried garlic and sauce, season with salt and chilli flakes to taste and heat through.
- Optionally fry an egg to put on top, garnish with sesame, crispy onions, ABC Soy or whatever other seasoning you like. Enjoy!
