- Rice
- Chicken
- Eggs
- Onions and shallots
- Soy sauce, chilli sauce and shrimp paste
- Obento Panko breadcrumbs
- Prawns
- Chilli
- Prawn crackers
Method
- Cook rice and cool in fridge for 2 hours
- Wok fry prawns, onions, shrimp paste and set aside
- Beat 3 eggs and add chopped shallots, cook and cut into strips.
- Coat chicken pieces with obento panko breadcrumbs and cook in the oven for 35 minutes at 180degs
- Cook egg sunny side up
- Mix chopped up chilli with soy sauce
- Cook rice in wok with sesame oil and a teas of shrimp paste and soy sauce. Add cooked prawns, onions and egg.
- Plate up rice and chicken piece add egg on top of rice. Serve with chopped up chilli and prawn cracker chips
