
Ingredients
- Valcom Laksa Paste 1 jar
- Chicken Thigh 500gm
- 2 Large tomatoes
- 3 cups chicken stock
- 1 can Coconut Milk
- 1 tbsp coconut oil
- 1tbsp Brown sugar
- 1 Tbsp fish sauce
- Mung bean Sprouts
- Cucumber
- Coriander
- Peanuts
- Rice stick noodles
Method
- Fry oil in large pot, add valcom laksa paste and fry till fragrant
- Add cubed chicken thighs frying till almost cooked
- Pour half a can coconut milk over chicken, bring to boil till oil shows on surface. While you wait boil water and pour over rice stick noodles in a seperate large bowl
- Pour in rest of coconut milk, chicken stock, fish sauce, brown sugar and chopped tomatoes. Bring to a simmer then reduce heat till chicken is cooked through.
- When noodles are cooked drain and pour over cold water to prevent sticking
- Remove laksa from heat. Serve over noodles and top with chopped cucumber, bean sprouts, coriander and crushed peanuts.
