
Ingredients
- short squirt cooking oil spray
- small onion chopped
- 1tsp crushed garlic
- 1tsp crushed ginger
- 3tsp heaped laksa paste
- 1tsp turmeric
- 500ml water
- 1 chicken stock cube
- 400ml Coconut Milk
- 400g diced chicken
- 1tbsp cornflour
- 400g Fresh Rice Noodles
- 2 Cups Fresh Chopped VegetableYour ChoiceCarrot Broccoli Cauliflower Snow Peas
Method
- Spray Saucepan with Oil
- Saute Onion Garlic Ginger Laksa Paste Turmeric for 2 mins
- Add Chicken, Stir Until Sealed
- Stir in Fresh Vegetables Stir for 3-4 minutes
- Add water, stock Coconut Milk and bring to the boil
- Soak Noodles for 2 mins in Boiling Water & Drain
- Dissolve Cornflour in small amount water and stir into Laksa until thickened
- Allow to simmer for 10-15 minutes until vegetables are tender
- Plate Noodles and add Laksa
