
Ingredients
- Valcom Laksa paste
- 500g chicken
- 250ml water
- 660ml valcom coconut milk
- Broccoli
- Bok choy
- Bean sprouts
- Udon noodles
- Rice noodles
- Cucumber
- Chilli
- 3 Limes
- Salt/ pepper
- Fried shallots
Method
- In a large pot heat oil to high and add the chicken and laksa paste then continue cooking, stirring constantly until the chicken turns white, about 5 minutes.
- Turn the heat to low, add the coconut milk and broccoli stirring occasionally until warmed through. Add the juice of 2 limes, chilli, salt and pepper to taste. Remove from the heat, cover and set aside.
- Cook the rice noodles according to package directions. Drain the noodles and divide them among desired bowls.
- Ladle the soup over the noodles and then top with the bean sprouts.
- Slice cucumber and place ontop of laksa. Roughly tear apart the bok choy and place ontop with a wedge of lime to serve. Sprinkle fried shallots over and serve immediately.
