
Ingredients
- Sashimi grade king fish (or other sashimi grade fish)
- 1 orange
- 1 lime
- 1.5 tbsp mirin
- 1 tbsp grape seed oil
- 3 tsp rice wine vinegar
- Small handful fresh coriander
Method
- Blend juice of one lime, half an orange, mirin, grape seed oil, rice wine vinegar and coriander until it makes a liquid
- Peel and cut the second half of an orange into thin slices
- Cut up kingfish into bite sized, thin sushami pieces, similar sized to the orange
- Arrange orange and kingfish on a plate and pour the liquid around the slices, garnish with coriander leaves.
