
Ingredients
- 1 cup of rice
- 1 sliced cucumber
- 1 diced avocado
- 250g salmon fillet
- 1/4 cup soy sauce
- 3 tbsp brown sugar
- 1 clove garlic minced
- 1 tbsp water
- Kewpie mayonnaise to drizzle
Method
- Mix soy sauce, brown sugar, garlic and water. Place salmon in an oven dish and cover with marinade, leave to marinate in fridge for 2-3 hours.
- Cook rice according to package instructions.
- Take marinated salmon out of the fridge and cover the oven dish in foil. Cook in a 200 degree oven for 20 min.
- Flake salmon and add to bento box, along with boiled rice, avocado and cucumber pieces. Drizzle with Kewpie mayonnaise.
