
Ingredients
- 2 Salmon fillets skin on
- Any stir fry vege mix of your choice
- 2 packets Obento Udon noodles
- 2 cloves of garlic
- Small knob of ginger, finely chopped
- 2 finely diced shallots
- Half a red chilli finely sliced (optional)
- Obento Mirin Seasoning
- Obento Cooking Sake
- Kewpie Mayonaise to taste
- Soy sauce
- Sesame oil
- Cooking oil
Method
- To make the marinade, in a bowl mix 1 tbsp soy sauce, 3 tbsp mirin and 1 tbsp sake together
- Place the salmon fillets in the bowl with the marinade and set aside
- Finely dice the garlic and ginger - set aside
- Chop/dice the stir fry vegetables of your choice - set aside
- Heat some cooking oil in a non stick pan over medium heat
- Take the salmon out of the marinade and add the salmon, skin side down to the pan. Leave it to cook, turning as necessary on its sides and front, and basting it occasionally with the excess marinade.
- While the salmon is cooking, heat oil in another pan or wok over medium heat
- Add the garlic and ginger and fry together for 2 minutes until just brown
- Add the stir fry vegetables with a drizzle of soy sauce and sesame oil. Stir and cook until veges are just done
- Add the udon noodles to the stir fry vegetables and gently mix together until noodles are loosened and warmed through
- When the salmon is cooked to your liking, take it out of the pan and place on a plate
- Place the udon noodle stir fry next to the salmon on the plate
- Garnish with shallots, chilli, and a drizzle of kewpie. Enjoy!
