Kewpie’mole Loaded Fries

Ingredients
- Sweet Potato Fries
- 2 Avocados
- 1/4 cup finely diced Red Onion
- 1 clove Minced Garlic
- 1 Tbsp Minced Ginger
- 1 Tbsp Rice Vinegar
- 1/2 Tbsp Mirin
- 2 teaspoons Sesame oil
- Juice of 1 Lime
- 1 (room temperature) tomato seeded & diced
- 2 Tbsp finely chopped cilantro
- Celtic or Himalayan Salt to taste
- Sour Cream to garnish
- Kewpie Mayonnaise to garnish
- 150g Diced Bacon - pan fried to garnish
- 2 - 3 Shallots - finely sliced to garnish

Method
- First up, make the decision if you are oven baking or air frying.Preheat Oven or Air Fryer on 200 degrees Celsius.Place sweet potato fries on a lined baking tray and bake in oven for 15 minutes or until starting to brown. Alternatively, place in air fryer basket and cook in 5 minute increments, shaking the basket between intervals to prevent fries sticking together until browned.
- Whilst the fries are cooking, prepare the Asian-Inspired Guacamole. Mash avocados in a bowl. Add remaining ingredients (not the garnishes) and stir to thoroughly combine. Add salt to taste.
- Plate up cooked sweet potato fries between bowls. Plonk a huge dollop of guacamole on the fries. Top with an additional dollop of Kewpie Mayonnaise and a dollop of sour cream to the side. Sprinkle the bacon bits over the top and finish with the scallions of shallots.
- To complete this Fab & Fast edible masterpiece, let loose with a trail of Kewpie Mayonnaise zig zag from top to bottom and then try to stop yourself from gulping it down 'Fast' and expressing in satisfied indulgence, that was Fab!
