
Ingredients
- Eggs
- Lettuce
- Kewpie mayo
- Bread
- Tomato
- Butter
Method
- Soft boil 3 eggs
- While waiting, butter two pieces of white sourdough toast (homemade is best!)
- Once boiled, peel eggs
- Separate yolk from whites
- In a bowl, mix yolk with a generous amount of kewpie mayo (more is better!) and a dash of milk if needed. Add salt and pepper to taste
- Chop egg white and add to bowl of yolk
- To construct the sando, put a piece of lettuce on the toast, add egg mixture, a few tomatoes if you have them (ours were from the garden) and another piece of lettuce on the top before adding the second piece of toast.
