
Ingredients
- 4 x Seaweed sheets
- Half med cauliflower-riced
- 125 grams cream cheese
- 1 Tbls toasted sesame seeds
- Half an avocado-sliced
- Half a cucumber-sliced
- Optional: Soy sauce, wasabi, pickled ginger
Method
- Steam or fry cauliflower-rice for 10 minutes, allow to cool
- Mix through the cream cheese and toasted sesame seeds
- Lay out the 4 seaweed sheets and spread a quarter of the cauli mix over each, leaving a 2 cm border on one side of each sheet
- Lay avocado and cucumber in a strip along the middle of the cauli mix
- Roll up the sushi and cut into portions to serve alongside optional soy, pickled ginger and wasabi. Each sheet makes 2 sushi rolls (8 sushi rolls in total).
