
Ingredients
- 250 g boneless, Chicken thigh or Pork, cut into bite-size pieces
- 1 small sweet Apple, peeled, cored and finely grated
- 1 Tablespoon Honey
- 1 Tablespoon Vegetable or Olive oil
- 1 large Onion, cut into bite-size pieces
- 1 large Carrot, peeled, cut into bite-size pieces
- 1 medium Sweet Potato, peeled, cut into bite-size pieces
- 2 cups of Chicken or Vegetable broth
- 1 cup warm water
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Obento Mirin Seasoning
- 6 blocks of Curry Roux
- 2 Tablespoons pureed Apple or Apple Jelly
- Salt and fresh ground black Pepper to taste.
- 4 cups cooked Rice to serve
Method
- In a medium bowl, toss together the Chicken or Pork,the grated Apple and Honey: Cover with plastic wrap and letmarinate for around 20 minutes in the refrigerator.Bring back to room temperature for 10 minutes before using.
- Heat the oil in a large, wide pot over medium heat, then add the Onions and sauté until tender (about 10 minutes). Stir in the marinated meat mixture and cook until no longer Pink labout 5 minutes). Stir in the Carrots and Sweet Potatoes, then add in the broth, 1 cup warm water, the Soy sauce and Mirin Seasoning. Mix and simmer, uncovered for 15 minutes.
- Add in the Curry Roux blocks and stir until dissolved and the Curry has thickened for around 15 minutes. Remove from the heat and stir in the Apple puree and season with Salt and Pepper to taste.
- Serve with cooked rice.
