- Obento Sushi Seasoning
- Sushi Rice
- 4 Eggs
- Tofu
- 1 Carrot
- 1 Cucumber
- 1 Avocado
- Obento japanese yaki nori for sushi
- Dashi Stock
- Sugar
- Obento mirin
- Soy sauce
- Oil
- Kewpie Mayo (optional)
- Kecap Manis (Optional)
- Wasabi (Optional)
Method
- Begin boiling 3 cups of sushi rice according to package instructions. Once cooked, spread out on a sheet pan and season with Obento Sushi rice seasoning. Set aside to cool.
- Meanwhile, julienne carrots and cucumber and slice up an Avocado. Set Aside.
- Cook tofu on medium heat and slice into strips. Set aside to cool
- Whisk egg in a bowl and season with 1/4 cup Dashi stock, 1 teaspoon sugar, 1 teaspoon Obento mirin, and 1 teaspoon soy sauce until sugar has dissolved.
- Lightly grease a non-stick pan and place on medium high heat. Pour in a thin layer of the egg mixture and swirl to coat pan. Cook until bottom is firm (about 1-2 min). Lift up one edge using a spatula and roll up the egg layer. Push to the side and pour in more egg lifting first omelette before rolling again once new layer is firm. Repeat until all egg is used and you have one Japanese omelette roll (Tamago egg). Set aside to cool and then cut into strips.
- To assemble sushi, lay a piece of nori onto a sushi mat with the shiny side down. Spread an even amount of the sushi rice covering 3/4 if the nori (leaving approx. 3cm at the end furthest away from you). Working with wet hands will help the rice not stick to your hands as you assemble.
- Lightly wet, with water, the exposed end of the nori. This will help it to stick together when rolled.
- Place veggies, egg and tofu in a line closest to you. Add a thin line of Kewpie Mayo and Kecap Manis (both Optional).
- To roll, carefully start to roll the end closest to you, away from you, applying pressure to keep the wrap tight.
- Use a sharp Knife to slice into 8 pieces. Wetting the knife helps with slicing the sticky rice. Enjoy with Soy sauce and wasabi.
- Best served same day, but can be kept for up to 2 days. Keep in fridge, unsliced, until ready to serve.
