
Ingredients
- 1 x Block of Tofu 400g
- 1 x brown onion
- 2 x carrot
- 3 x medium size potatoes
- 500mL water
Method
- Preheat oven to 200C. Dice tofu into small cubes. Spread tofu evenly onto an oven tray lined with baking paper and place into the oven for 40 minutes or until crispy and slightly golden.
- While the tofu is in the oven, dice the onion and cook in a pot on low heat for 10 minutes until onion has caramelised.
- Cut the potatoes into bite-sized cubes and cut carrots into 1/2cm thick slices.
- Once the onion has caramelised, add 500mL of water to the pot with the onion. Add the potatoes and carrots. Leave to boil for 40 minutes.
- Add 5 cubes of S&B’s Golden Curry Mild. Dissolve cubes by stirring. Add tofu to the pot and continue to cook on low heat for 10 minutes.
- Serve with rice and enjoy!
