
Ingredients
- 1 brown onion
- 1 S&B Golden curry mix medium hot
- 3 large carrots
- 5 potatoes, any kind
- 3 tablespoons of soy sauce
- 1 litre of vegetable stock
- Fry’s Meat Free Schnitzels with soy and flaxseed
- 1 tablespoon of garlic
- Jasmine rice to serve
Method
- Cut 1 large brown onion into thin slices and brown in a large pan over a high heat with some olive oil.
- Cut potatoes into cubes and slice carrots thinly.
- Once onions browned, add 1 litre or vegetable stock and bring to boil in pan. Add garlic and soy sauce to the sauce.
- Add potatoes and carrots, and then add S & B curry stock cubs. Stir until curry thickens and cook until vegetables are cooked through.
- Cook jasmine rice and schnitzels when curry is nearly ready , serve together and enjoy.
