
Ingredients
- Silken tofu 300g
- Green shallot x2
- Ginger 1/2 tsp
- Mushrooms x5
- Obento rice wine vinegar 1 tbl sp
- Obento mirin 1tbl sp
- Soy sauce 1 tbl sp
- Vegetable oil 1 tbl sp
- Slice bread x2
- Sesame oil 1 tsp
Method
- Heat vegetable oil and cook mushrooms and shallot until soft
- Add ginger and fry for about 1 min
- Add tofu and chop up using spatula or wooden sooon to smaller 1cm bits.
- Add vinegar, mirin, soy sauce and sesame oil and cook stirring until most of the liquid is absorbed.
- Pop bread in the toaster to toast
- Place the tofu mixture on the toast and serve!!
