
Ingredients
- Golden curry Japanese curry Mix mild & medium hot
- Rice (as much as your preference)
- 4 Celery sticks diced
- 1 Brown onion diced
- 1 large carrot diced
- Broccoli chopped
- 500g of mixed beef and pork mince
- Vegetable oil 2 tbs
- Mushrooms 3 or 4
- Tonkatsu sauce 3-4 tbs
Method
- Wash the rice untill it runs clear then leave it to soak in water for 20 minutes (this gives the rice a nice texture)
- While the rice soaks, dice up all the vegetables
- In a deep pan fry the onion, Mushrooms & Celery in half the oil until soft, add in mince, cook until mince is cooked through, stir in tonkatsu sauce & leave to rest.
- Strain water from soaking rice fill with cold required amount of water then cook. 2 cups of rice needs about 3 cups of water (rice cookers have an indicator or you can use your finger)
- In a small pot add remaining oil diced carrot and broccoli after 3 minutes add in the water amount according to curry Mix packet instructions.
- Once water is brought to boil add in the curry Mix by breaking it to pieces (I like to use 3-4 blocks from each pack)
- Stir continuously until curry thickens and all pieces of curry Mix are dissolved.
- You can add mince mix to the curry sauce or you can just spoon the rice into a bowel and add a layer of mince then pour curry Mix over the top serve how ever you like and enjoy.
