
Ingredients
- Sushi Rice (plain) 1 cup of rice 1 cup of water 3 tbsp of Obento Sushi Seasoning
- Sushi Rice (Flavoured)1 cup of rice 1 cup of water 2 tbsp of Obento Sushi Seasoning2 tbsp of Obento Yakitori sauce
- Fillings – mushrooms I cup of diced mushrooms. 2 tbsp of Yakitori sauce 1 Tbsp of Mirin3 small shallots diced (red onion)
- Fillings – tuna Small can of tuna2 tbsp of Kewpie Mayonnaise 2 shakes of pepper
- 2 cups of Obento panko breadcrumbs. 2 eggs1 piece of shredded seaweed - Obento Yaki Nori for Sushi
Method
- Sushi Rice (plain)Cook rice with 1 cup of water. Once rice cooked, put in bowl – stir in 3 tbsp of Obento Sushi seasoning.
- Sushi Rice (Flavoured) Cook rice with 1 cup of water Once rice cooked, put in bowl – stir in 2 tbsp of Obento Sushi Seasoning and 2 tbsp of Yakitori sauce.
- Coating for Arancini balls Put one cup of Obento panko breadcrumbs in a bowl Put one cup of Obento panko breadcrumbs in another bowl and add chopped up seaweed or Furikake Crack the eggs in a bowl and beat well.
- Mushrooms fillings Add oil to a pan and once heated, add diced shallots and stir Add mushrooms to a pan and stir until soft Add Obento Yakitori sauce, mirin and mix well, have a taste and add more Yakitori sauce if you want, once everything is mixed through, put in a bowl
- Tuna fillings Add tune in a bowl, add Kewpie Mayonnaise, pepper and stir
- Mushroom Arancini balls Spread about ¼ cup of plain sushi rice on cling wrap Add a tbsp of mushroom.Wrap and shape in to a ball Unwrap the rice ball and dip in beaten egg Coat in Obento panko breadcrumbs
- Tuna Arancini balls Spread about ¼ cup of Yakitori flavoured sushi rice on cling wrap Add a tbsp of tuna Wrap and shape in to ball Unwrap the rice ball and dip in beaten egg Coat in Obento panko bread crumbs with the shredded Yaki Nori for Sushi (seaweed) or furikake mixture
- Put the coated balls in to the fridge for 15 mins to firm up while you hear the air fryer
- Cook Arancini balls Heat the Air fryer to 180 degrees Spray arancini balls with some oilPut in the arancini balls to fit the air fryer Cook at for 6 mins Turn heat up to 200 degreesCook for another 5 mins Please check as you want it brown but not burned, the air fryer I used is quite quick
- Take out and serve – with extra mayonnaise.You can eat it warm, or take for work, or picnic.
- You don't have to coat all in Panko and can have flavoured rice only or some without fillings and/ or use the flavoured rice for the mushroom filling too.
