
Ingredients
- Golden curry
- Potato
- Carrot
- Mushroom
- Red capsicum
- Tofu
- Onion
- Breadcrumbs
- Flour
- Egg
- Vegetable stock
- Oil
- Rice
Method
- Soften carrot and onion in saucepan with oil
- Add potatoes and stock and simmer for 15mins
- Add golden curry packet, stir through, add mushrooms and capsicum. Cook another five mins
- In a separate pan, fry in oil pieces if crumbed tofu (first put in flour then raw egg then breadcrumbs)
- Serve curry with rice and tofu on the side
