
Ingredients
- 1/2 bok choy, chopped
- 1 white onion, diced
- 1/2 bunch spring onion, chopped - allow extra for garnish
- 1/2 packet of S&B Golden Curry, spiciness of your desire
- 1 packet udon noodles (400g)
- Soy sauce (to taste)
- 200g beef mince
- Preferred cooking oil
- 3 cups of preferred stock (chicken, dashi, vegetable)
Method
- Place a pot over medium heat, add oil and allow to reach temperature. Meanwhile dice vegetables. Add vegetables to pot and cook until softened, about 3 minutes.
- Add beef mince to pot and cook for 4-5 minutes, or until a browned.
- Pour in desired stock and add udon noodles to the pot. Bring to a boil and allow the noodles to cook for a couple of minutes.
- After noodles have softened add half a packet of S&B Golden Curry Roux. For a thicker broth add extra roux, or for something soupier add extra stock. Stir the roux through to dissolve.
- Add a dash of soy sauce (optional). Garnish with extra spring onions and serve!
