
Ingredients
- 500g Diced Chicken
- 200g Chopped Carrots
- 200g Chopped Potatoes
- 1 large Brown Onion
- 2 tbsp Olive oil
- Salt and pepper to taste
- 1 packet S and B Golden Curry
- 600ml water
- Fresh Red chilli (optional)
Method
- Peel Potatoes and chop into small cubes, try and keep them the appoxmate same size for even cooking
- Peel and Chop Carrots starting at one end of carrot and rotating carrot quarter turn each time
- Peel and Chop onions.
- Using half the oil , Fry Chicken on high in a large pot or skillet for about 5 minutes then set aside.
- Useing the rest of the oil fry the onions for about 2 minutes on high, stirring constantly.
- Add carrots and potatoes and fry for another 5 minutes
- Add chicken back to the pot, stir to combine then add water.
- Bring water to boil then lower temperature and simmer covered until tender, about 15 minutes.
- Add 1 block of S and B Curry and stir to combine, simmer for about 5 minutes or until sauce is desired consistency. Add salt and pepper as desired.
- Serve over Rice with chopped red chilli on side. Enjoy :)
