
Ingredients
- S&B Golden Curry (Mild)
- Coconut Cream (200ml)
- Chicken Breast (2)
- Baby Spinach (120g)
- Brown Onion (2)
- Potato (4)
- Herbs & Spices - Optional (Chilli powder, onion powder, garlic powder, paprika)
- Broccoli (1)
- Basmati Rice (1 cup)
- Water (4 cups)
- Lime (Optional)
Method
- Wash basmati rice thoroughly and cook in rice cooker (or stove top if preferred)
- Dice potatoes into bite sized cubes and boil until you can put a fork through them (make sure they are not over cooked or they will start to mash)
- Dice chicken into bite sized cubes, season with herbs and spices (optional) and then dice 2 onions into cubes as well
- Cook chicken on a fry pan until white and then add 2 diced onions, cook until onions are soft
- Remove chicken and onions from the fry pan and set aside
- Bring 2 cups of water to a boil in the fry pan, add in 1 packet of S&B Golden Curry (Mild) using a fork or potato masher until you achieve a smooth consistency
- Chop broccoli into small pieces, add to fry pan and cook until broccoli is soft
- Add coconut cream and baby spinach, cook for 5 minutes and then finally add back in your cooked chicken and onion as well as the cooked potato cubes
- Serve on a bed of basmati rice and enjoy! Optional - Add a squeeze of fresh lime juice on top
