
Ingredients
- 500g chicken thigh
- 350g onions
- 100g carrots
- 150g white potatoes
- Cooking oil
- 540ml water
- 1 box S&B golden curry
- 5 cups of cooked rice
Method
- Chop meat and veg to a desired size
- Oil your pan or pot
- Stir-fry meat and veg for approx 5 minutes, or until browned
- Add water and bring to boil
- Once boiling, cover and reduce heat to simmer until ingredients are tender, approx 15 minutes
- Chop S&B golden curry into small pieces
- Add them to pot or pan and stir through until it all disolves
- Simmer another 5 minutes, stirring constantly
- Serve over a cup of rice
