
Ingredients
- 1 cup sweet biscuit crumbs
- 1/2 cup desiccated coconut
- 80g butter
- 1 x 400ml can Valcom Coconut milk
- 7 teaspoons gelatine powder
- 8 medium strawberries
- 600ml Yeo's Lychee drink
Method
- Preheat the oven to 180 Degrees C. Grease and line a 20cm x 20cm square cake tin. Melt the butter in a large microwave-proof bowl, then add the biscuit crumbs and coconut, and combine thoroughly. Spread the biscuit mixture evenly in the bottom of the cake tin, pressing it down firmly all the way to the corners. Bake for 15 mins.
- Pour the coconut milk into a bowl and set aside ready. Place 3tsp gelatine powder in a small jug. Add 3 tablespoons of water and whisk to combine. Rest for one minute, then microwave in small bursts to melt the gelatine, stopping to mix it frequently and ensuring the mixture never boils. When all the gelatine has been incorporated, pour it into the coconut milk, stirring constantly. Pour the coconut and gelatine mixture on top of the biscuit base, and transfer to the fridge to set for 2 hours.
- Slice the strawberries vertically, then remove the hull with a knife by making two angled cuts, thereby creating a heart shape. Place the strawberry hearts on the set coconut jelly, setting them out in a 4 x 4 grid (so that each slice of jelly will have one strawberry in the centre).
- Pour the Lychee drinks into a bowl and set aside ready. Place 4tsp gelatine powder in a small jug. Add 4 tablespoons of water and whisk to combine. Rest for one minute, then microwave in small bursts to melt the gelatine, stopping to mix it frequently and ensuring the mixture never boils. When all the gelatine has been incorporated, pour it into the lychee drink, stirring constantly. Pour the lychee and gelatine mixture over the coconut jelly and strawberries, taking care not to displace the strawberries. Return to the fridge to set for another 2 hours.
- Once set through, remove the jelly carefully from the tin, using overhanging baking paper to help. Slice the cake into 16 squares, with a strawberry in the centre of each square, and serve.
