
Ingredients
- ABC Sweet Soy Kecap Manis (150 ml)
- Ginger (golf ball sized)
- Sambal (tablespoon)
- Coconut oil (Tablespoon)
- Onion (Large)
- Leak
- Red Capsicum
- Black Beans (3x400g tins)
- Pineapple Chunks in juice (250g tin)
- Rice (1 cup)
Method
- In large pot heat coconut oil
- Add chopped ginger, onion and sambal and cook on high until onion begins to brown
- Add chopped up red capsicum and leak and stir in for 1 minute
- Add tinned beans and pineapple (including all juice)
- Add ABC sweet Soy (Kecap Manis) and cup of rice
- Summer on low for 10 mins with lid on, stirring occasionally
- Remove from heat but leave covered for another 10 mins then serve
- Top with satay sauce (make with ABC sweet Soy, peanut butter, sambal and coconut milk) optional
