
Ingredients
- 1 Medium Cucumber
- 1 Mango
- 1/2 Avocado
- 3 Surimi sticks
- 1/2 Nori sheet
- 1 pinch Sesame seeds
- 1 tbsp Soy sauce
- 1 tbsp Rice wine vinegar
- 1/2 cup Sushi rice
- 1 pinch Panko
- Sriracha Sauce
- Kewpie mayonnaise
Method
- Thinly slice the cucumber, mango, avocado, and surimi sticks and combine in a bowl
- Rinse and cook sushi rice for 12-13 minutes on the stove and let to rest
- Allow sushi rice to cool before adding to bowl
- Finely chop nori sheet and add to bowl as garnish
- Drizzle rice wine vinegar, soy sauce, sriracha, Kewpie mayonnaise, and soy sauce over bowl to taste
- Top with sesame seeds and panko for extra crunch
