
Ingredients
- 1 cup of Obento sushi rice rinsed.
- 1.5 cups of water
- 1 425 gram tin tuna in spring water
- 5 tbs mayonnaise - more or less to taste
- Salt to taste
- Pepper to taste
- Chilli flakes to taste
- 1 carrot julienned
- 1 medium sized cucumber julienned
- 1 avocado thinly sliced
- 1 small bowl of water
- 1 packet Obento yaki nori for sushi sheets
- Optional - Chilli oil, home made or store bought
Method
- Rice: Placed rinsed sushi rice in a medium sized saucepan, add one and a half cups of water.
- Bring the water to a boil, and then lower the heat and let the rice simmer with the lid on for 15 minutes.
- Turn the heat off, set aside and let the rice cool down.
- Tuna mix: Drain first, then place the tin of tuna in a bowl and add 5 tablespoons of mayonnaise or more or less to taste. Also add in salt, pepper and chilli flakes to taste. Mix well.
- Assemble the sushi:Lay out a sushi mat. If you don’t have one, you can use baking paper.
- Place a sushi sheet on the sushi mat or baking paper with the rough side facing up.
- Place the cooled sushi rice on the sushi sheet, spreading a thin layer all over and leaving 1cm on the top and bottom edges of the sushi sheet bare.
- Horizontally place a row of the precut cucumber, carrot and avocado on top of the rice, together with the pre-prepared tuna mix. Starting at the edge closest to you.
- Dip your fingers in the bowl of water and run some water along the bare edges of the sushi sheet. This will act as the ‘gluing’ agent.
- Lift the edge of the sushi mat or the baking paper and roll the sushi, rolling away from you. With each full turn, squeeze the sushi so that it is held together well. Once you have reached the end of the sushi sheet, make sure that the edge is wet so that the sushi roll is well sealed.
- Using a sharp knife, cut both of the edges off to ensure neater slices. Then slice the sushi roll into 1 inch size pieces. Place on a tray.
- Repeat the above process until all of the tuna mixture has been used.
- Serve with soy sauce and chilli oil (optional).
