
Ingredients
- Obento Sushi Rice
- Obento Nori sheets for sushi
- Obento sushi seasoning
- Obento ponzu sauce
- Obento teriyaki marinade
- Cooked Prawns - peeled
- Kewpie mayonnaise
- Chicken thigh or breast fillets cut into thin strips.
- Tuna in springwater. Stain off water.
- Avocado cut into long thin strips
- Cucumber cut into long thin strips.
- Caster sugar
- Salt
Method
- Wash 2 cups of sushi rice in a bowl and drain. Rinse and repeat until the water runs clear. The clearer the water the better the rice texture when cooked. Marinade chicken in teriyaki marinade and set aside. For best results marinade overnight. Cut into thin strip's before cooking. Add mayonaise to strained canned tuna and mix well. Add salt if desired.
- Add washed rice and 4 cups of water to a pot and bring to the boil. Once boiling, reduce to a simmer for 15 minutes. After 15 minutes turn off heat and let sit for another 15 minutes to absorb the water. Start cooking in a frying pan your marinaded chicken cut into thin strips. Cook until browned for best flavour.
- Once rice is cooked, add 1/2 tablespoon of caster sugar, 1/4 teaspoon of salt to 4 tablespoons of sushi seasoning. Mix to combine and pour onto cooled sushi rice. Mix well.
- Lay out your sushi rolling mat with a sheet of Obento Nori seaweed - shiny side down. Lay out a thin layer (1cm thick) of rice from the bottom edge leaving about 2cm from the top edge. Rice can go all the way to the sides.
- Lay your fillings across the sheet in a thin line about 2-3cm wide at most. You can add anything you like. I used a line of mayonnaise, then tuna mayo-mix, added avocado. For chicken, I layer chicken strips across the sheet, added avocado or cucumber. For the prawns, I added mayonnaise, prawns and avocado.
- Once your follong is laid out, start rolling from the bottom edge of your mat using your fingers to hold the filling into the roll. Continue to roll and pull the top edge of the sushi mat up. Complete the roll using the 2cm of sheet that was left bare. All done. Cut the sushi log into 2cm thick slices or in half for a California roll. Serve with Ponzu sauce or other dip of your choosing.
