- valcom paste
- kaffir lime leaves
- coconut milk
- can diced tomatoes
- garlic (minced)
- eggplant (diced)
- butternut pumpkin (diced)
- spinach
- olive oil
- fish sauce
- capsicum (diced)
- cherry tomatoes (halved)
- hoki fish
- basil
Method
- cook paste in pan with olive oil until fragrant
- add eggplant, capsicum, garlic to cook in oil. meanwhile, half boiul pumpkin until no longer hard.
- add pumpkin into mix. Make sure all veggies are soft and translucent.
- add coconut milk and dice tomato tin. Add cherry tomatoes. Cook until veggiea re tender. Add kaffir lime leaves. Add fish chopped into bite sizes when recipe is almost finished (fish cooks quickly). Add 2 bunches of basil. Serve with rice.
