
Ingredients
- 400g pork fillet
- 1-2 carrots sliced into batons
- 2 cups broccoli
- 4 spring onion and/or 1 brown onion sliced
- 2 Tbsp cashews
- 1 cup chopped mushrooms
- 180g of udon noodles (2 bunches)
- 1 tbsp sesame oil
- 3 cloves of crushed garlic
- 1 tbsp rice wine vinegar
- 1 tbsp fresh grated ginger
- 2 tbsp honey
- 2 tbsp peanut butter
- 1/3 cup soy sauce
Method
- Make the hoisin sauce by whisking together soy sauce, peanut butter, honey, ginger, rice wine vinegar & garlic.
- Prepare the noodles as per pack instructions.
- Thinly slice the pork.
- Heat a wok or fry pan over medium-high. Add sesame oil and stir fry pork for 1 minute, then add the veggies. Cook until pork is cooked through.
- Add the sauce to the pan and toss t combine.
- Serve with noodles on the bottom. (Serves 4).
