
Ingredients
- 1 Eggplant
- 1 Tbsp Hoisin
- 1 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1/2 tsp Sugar
Method
- Cut eggplant lengthways and score it.
- Mix the rest of the ingredients in a bowl.
- Brush sauce over the eggplant.
- Cook in air fryer for 8 minutes on 180°c
- Take eggplant out and glaze with remaining sauce
- Place eggplant back into airfryer for a further 10 minutes
- Season with sesame seeds and spring onion and serve with rice and salad
