
Ingredients
- Smoked salmon
- Corn kernels
- Edamame beans
- Shredded carrot
- Zucchini noodles
- Cherry tomatoes
- Cucumbers
- Shredded cabbage
- Sliced shallots
- Seaweed
- Cauliflower rice
- Kewpie sriracha mayonnaise
- Fried shallots
- Kewpie roasted sesame dressing
- Avocado
Method
- Add cooked cauliflower rice to a bowl
- Thinly slice 3 shallots, 5 cherry tomatoes, 1 cucumber. Shred carrot and cabbage thinly, drain a small can of corn kernels and edamame beans. Slice avocado.
- Assemble all ingredients on top of the cauliflower rice. Add protein of your choice (smoked salmon in this case). Sprinkle fried shallots onto all ingredients and add 2 tablespoons of dressing. Squeeze a generous amount of kewpie sriracha mayonnaise on top and enjoy!
