
Ingredients
- 1x Continental cucumber (chilled)
- 10-12x Fresh Australian banana prawns
- 1-2x Hass avocado
- Pot of boiling water
- Kewpie Japanese Dressing Roasted Sesame
- Salt
- Ground white pepper
- Sesame oil
Method
- Wash 1 cucumber and refrigerate ahead of time. (Cheat: Quick-chill for 20 minutes max. in the freezer while you do the next steps)
- Devein fresh banana prawns with a sharp toothpick.
- Season prawns with some salt, white ground pepper and a dash of sesame oil on a stainless steel plate.
- Steam prawns for 6-7 minutes or until fully cooked. Do your happy kitchen dance.
- Twist off prawn head and save it for another dish. Peel off remaining prawn shells. Set prawn meat aside.
- Slice open avocado in half like a boss, remove pit and use a spoon to scoop out pieces of the delicious fruit. (Cheat: Eat one for a cheeky taste test and repeat this step with a new avocado)
- Cut the ends off your cool cucumber. Save it for a beauty routine later or save the planet by tossing into compost.
- Peel off some cucumber skin along the grain into a stripe pattern. Leave some skin on for extra crunch.
- Chop cucumber into 2 inch or 5cm-long sections then slice from the outer edges into thin strips without the seed centre.
- Plate up! Toss sliced cucumber evenly in Kewpie Roasted Sesame Dressing. Throw in prawns and avocado toppings. And voilà, bon appétit!
