Method
- MIX ALL INGREDIENTS AND MARINATE OVERNIGHT
- PLACE CHICKEN IN OVEN PROOF DISH AND COOK ON HIGH FOR 3 MINUTES EACH SIDE
- PLACE DISH IN OVEN AT 200 DEGREES FOR 25 MINUTES
- MEASURE SAME INGREDIENTS OUT AGAIN, MIX AND SIMMER FOR 10 MINUTES IN A SAUCEPAN
- REMOVE CHICKEN FROM OVEN AND ADD SAUCE FROM SAUCEPAN. MIX WELL, SCRAPING SIDES OF DISH. SERVE WITH KAFIR LIME LEAF AND CORIANDER OVER JASMINE RICE
