
Ingredients
- 500g chicken breast diced
- 1/2 jar Valcom green curry paste
- 400ml Valcom coconut cream
- 1 - 2 cups mixed vegetables; eg. Beans, carrots, broccoli
- Basil to garnish
- 2tsp oil
- 2 basmati cups of rice
Method
- Heat oil
- brown chicken to seal
- Add coconut cream
- Add paste and mix
- Add vegetables
- Stir through and simmer for 15mins
- Prepare rice to serve on the bottom of the dish
- Once the curry has simmered, pour over the rice
- Add basil leaves to garnish (optional)
