
Ingredients
- 500g chicken tenderloins diced
- 1 medium brown onion chopped
- 1 medium Zucchini chopped
- 1 red capsicum chopped
- 150 grams of green beans chopped into 2 cm pieces
- 1/2 Jar Valcom Thai green curry paste
- 2 tbs of vegetable oil
- 1 x 400ml can coconut milk
- 1 x tsp fish sauce
- 1 x tsp sugar
Method
- Dice chicken into 2 cm pieces
- Chop the capsicum, green beans, zucchini and onion
- Stirfry half a jar of Valcom green curry paste with 2 tbs of oil over medium heat until fragrant
- Add half a can of 400ml coconut milk And stirfry for about five minutes or until the sauce thickens and oil appears
- Add 500g of diced chicken and onion and cook over high heat for 2 minutes
- Add remaining coconut milk, fish sauce and sugar and bring to the boil
- Add capsicum, green beans, and zucchini and cook until tender.
- Serve with rice.
