
Ingredients
- Valcom Green Curry Paste
- 1 onion
- 2 carrots
- 1 capsicum
- 1 zucchini
- 500gms of chicken pieces
- 1 can of coconut cream
- Handful of string beans (or frozen peas)
Method
- Slice onion and fry off in a pan with oil
- Add one jar of Valcom Curry paste and fry off with the onion
- Add chicken pieces and continue to fry off
- Add sliced up vegetables - carrot, zucchini, capsicum.
- Add one can of coconut cream/milk and half a can of water.
- Simmer for at around 25 minutes
- Add beans/peas and cook for a further 5-10 minutes until tender.
- Serve in a bowl - you can add serve with rice but if you are watching your carb intake then enjoy it as more if a ‘soup’
