- Chicken breast
- Eggplant
- Frozen spinach
- Frozen Thai mix
- Lite coconut milk
- Valcom Green Curry Paste
Method
- Chop chicken and eegplant
- Fry chicken and eggplant on med-high heat
- Add curry paste and fry off for a minute
- Add coconut milk and turn down to simmer
- Add spinach and vegetables. When cooked through, serve.
