
Ingredients
- Chicken thigh
- Shallot
- Garlic
- Ginger
- Half jar Valcom Green curry paste
- Green chilli
- Valcom coconut milk 1 can
- Valcom bamboo shoot
- Broccoli
- Baby corn
- Half onion
- Lime + coriander to garnish
- Valcom kefir lime leaves
Method
- Fry shallots, onion, ginger, garlic and green chilli together in some vegetable oil until soft
- Add curry paste and fry until fragrant
- Add chicken, bamboo shoots and baby corn and corn and mix through paste
- Add coconut milk and kefir lime leaves and cook with lid on for 15 minutes
- Remove lid, mix through broccoli florets and let sauce reduce for 5 minutes on a medium heat
- Serve with rice and garnish with fresh coriander and lime
