
Ingredients
- S&B Golden Curry x 1 box (
- 1 brown onion
- 2 carrots (or 3 small carrots)
- 2 small potatoes
- Cooking oil (2 tbsp)
- 750 ml water
- 1 cup x frozen peas & corn (or 1/2 cup each)
- Rice or noodles to serve
- Pickled red cabbage (optional garnish)
Method
- Chop onion in half and slice into slithers. Cut carrots into rounds and halve if needed to make all a similar size. Cut potatoes to similar size cubes.
- Heat pot to medium heat. Meanwhile, pre-boil about 1 litre of water in kettle.
- Add cooking oil to pot
- Add onion, carrot, potatoes and stir fry for approx. 5 mins.
- Add 750ml of water and bring to boil again. Then simmer, covered, until all ingredient are tender (approx. 15 mins).Add peas and corn in the last 5 mins.
- Turn off the heat, break the Golden Curry pieces and add to pot. Stir until all pieces are melted, then continue to stir for a total of 5 mins.
- Serve over rice or noodles.
- Optional: Garnish with picked red cabbage.
