
Ingredients
- 500g Chicken
- 3 large Potatoes
- 300g Carrots
- 1 Onion
- 1 packet 92g Golden curry powder
- 250g Jasmine Rice
Method
- Peel carrots and potatoes and chop into cubes. Bring to a boil in a pot to soften, (around 15minutes). At the same time, cook some rice in a rice cooker.
- Chop onion and chicken into small pieces. Oil a large skillet and panfry onions until golden. Add chicken and cook until starting to brown in medium heat.
- Add the boiled carrots and potatoes into the larger skillet with the cooked chicken, including the water (roughly 500mls).
- Bring to a boil then add in the golden curry powder. Stir thoroughly until curry powder is completely mixed in. Serve over cooked jasmine rice in a bowl.
