
Ingredients
- Chicken breast
- Potato
- Sweet potato
- Carrot
- Onion
- Garlic
- Ginger
Method
- Cook 2 chicken breasts in a large wok
- Take out chicken and set aside. Add ginger, onion and garlic to the wok. Sautée them together
- Remove sautéed onion, garlic and ginger and set to one side. Add potatoes and carrots. Add a dash of chicken broth and cook until tender.
- Re-add chicken and sautéed ginger/garlic/onion. Stir and simmer for 5-10 minutes
- Serve on plate with freshly steamed rice and garnish with fresh, crisp kale
