
Ingredients
- 2 x salmon fillets
- Thumb sized piece of grated ginger
- 1 x tablespoon of Sesame oil
- 1/4 cup of soy or tamari sauce
- 1/2 small Spanish onion thinly sliced
- Bunch of broccolini halved lengthways (you can also use normal broccoli)
- Handful of snow peas halved lengthways
- 2 inner rolls of soba noodles cooked to packet instructions
- 1/4 cup of Shaosing wine (Chinese cooking wine)
Method
- Marinade the salmon for 10 mins - 1 hour in the fridge in sesame oil, grated ginger and 2 tablespoons of soy sauce
- Cook salmon in a pan or on bbq
- When salmon is almost cooked or resting heat a wok with a small bit of oil, add onion cook for 1 min then add in broccoli & snow peas then add in soy sauce, shaosing wine and strifry for a few minutes.Add in noodles and toss until sauce has coated the noodles.
- Serve and place salmon on top of noodles.You can add some rice wine vinegar to the noodles if you want to make it a bit sharper.
