
Ingredients
- For Prawn Tempura:10 Prawns, clean and deveined
- 1 cup oil, for frying
- For Marinade:1/2 tsp Obento Mirin Seasoning
- 1/2 tsp pickled ginger juice
- a pinch of salt
- a pinch of pepper
- 1 tbsp. potato starch, for dusting
- For Tempura Batter:3/4 cup plain flour, sifted
- 1/4 cup potato starch, sifted
- 1/2 tsp bicarbonate of soda
- 1 cup ice cold sparkling water
- 1 large egg
- For dipping sauce:1/2 cup water
- 1 1/2 tbsp. soy sauce
- 1 1/2 tbsp. Obento Mirin Seasoning
- 1/2 tsp ginger strips
- 1/4 tsp sugar
- 1/8 tsp dashi powder
- For Garlic Fried Rice:1 cup Japanese Rice ( short grain rice)
- 3 cloves garlic, (2 cloves. sliced, 1 clove, minced)
- 1 tbsp. canola oil
- 1 tsp unsalted butter
- 1 tbsp. soy sauce
- 1 tsp Obento Mirin Seasoning
- 2 eggs, lightly beaten
- 1 tsp minced carrots
- 1 tsp spring onion, chopped
- a pinch of dashi powder
- salt and pepper to taste
Method
- To Prepare the Prawn Tempura:1. Clean, peel, deveined and straighten the prawns,
- 2. Put in a bowl and marinate with Obento Mirin, salt, pepper and pickled ginger juice. set aside for 15 minutes.
- 3. After 15 minutes, Pat dry to remove any surface moisture.
- 4. Dust potato starch over the Prawns and set aside while preparing the tempura batter.
- To Prepare the Tempura Batter:1. In a bowl. beat the egg and add in the ice cold sparkling water.
- 2. Add in the sifted flour, potato starch and bicarb of soda to the egg and water mixture. lightly combine the flour using chopsticks, Be careful not to overmix, it should be a little lumpy.
- 3. Lightly coat the prepared Prawns in the batter. Heat the oil and drop them gently one piece at a time fry them until lightly brown. Drain them in a paper towel and set aside.
- For dipping sauce (can prepare ahead)1. In a small saucepot, add water over medium-low heat.
- 2. Add the soy sauce, Obento Mirin Seasoning, dashi powder, ginger strips and sugar.
- 3. Heat until boils for one minute and then remove from heat.
- 4. Serve in a small sauce dish.
- To Prepare Garlic Fried Rice:1. To cook the rice, rinse the rice with water, transfer to a bowl and soak for 30 minutes. Drain the rice and then transfer it to a small saucepan, Add 1 1/4 cup water bring to a boil and cook for 10 minutes. reduce to low heat and allow to rest for another 10 minutes. Use fork to fluff up the rice and wait till it warm.
- 2. Add the oil to a non-stick frying pan over medium-low heat, add the sliced garlic in single layer. flip the garlic over until it start to brown around the edges, make sure not to burn them, Quickly remove the garlic chips from the pan. leaving oil behind.
- 3. Sautee the minced garlic chopped carrots. then add the beaten eggs. allow to set for few seconds before stirring, then add the rice, Stir fry until the rice is heated through and fragrant.
- 4. Next, add in the butter, season with salt, pepper, a pinch of dashi powder, half of the spring onions and soy sauce. quickly toss and stir it into the rice.
- 5. Drizzle the Obento Mirin Seasoning down the edges of the pan then stir and toss again.
- 6. Serve the Garlic Fried Rice in a bowl and garnished with garlic chips, Add the Prawn Tempura on top, drizzle with few drops of dipping sauce (optional) and garnish with spring onions.
