
Ingredients
- Sushi rice 1 cup
- Obento Yaki Nori for sushi sheets x 2
- Firm tofu 200g
- Capsicum small
- Avocado quarter
- Cucumber small
- Carrot x 1
- Rice wine vinegar x 1 tbsp
- Garlic x 3 cloves
- Water x 1.5 cup
- Sweet chill sauce x 2 tbsp
- Soy sauce x 3 tbsp
- Olive oil x 2 tbsp
Method
- Cook rice as per packet instructions, either stovetop or microwave. Add 1.5 cups of water to each cup of rice.
- Add rice wine vinegar to cooked rice and set aside to cool.
- Dice garlic and tofu. Add to frying pan with olive oil at a medium heat.
- Once tofu and garlic has goldened, add soy sauce (2 tbsp only) and sweet chilli sauce to the pan. Cook until crisp. Set aside to cool.
- Whilst the tofu is cooking. Finely grate carrot, and slice capsicum, cucumber and avocado into thin strips. Set aside.
- Place nori sheet on bamboo mat, shiny side down. Cover 2/3 of the nori with rice and flatten, leave 1/3 blank to roll.
- Add the tofu mix and vegetables to the centre. Slowly roll all ingredients in tight.
- Use remaining soy sauce to dip sushi roll. Enjoy!
