
Ingredients
- RECIPE FOR 2 SERVES
- 600g Obento udon noodles (3 x 200g packets)
- 250g or 10 Prawns tails-on (Peeled and deveined)
- 30g or 2Tbsp Regular salted butter
- 4 Garlic cloves (minced)
- 16 - 20 Thai basil leaves
- 1 Long red chilli (chopped)
- 1Tbsp Chilli oil (La-Yu, S&B)
- Pinch White ground pepper
- Salt to taste
Method
- In a large bowl, open and briefly soak the udon noodles in hot water until they loosen completely. Then drain the water and set aside. Also get all the other ingredients ready before starting to cook.
- Heat up a wok or frying pan on medium. Add the butter, garlic and chilli oil. Let the butter melt completely before adding the prawns.
- After adding the prawns, turn the heat on medium high and stir fry for about 2 minute or until nicely coloured. Then add the chopped chilli and cook for another 30 seconds.
- Finally, add the udon noodles and stir fry on high heat for about 2 minutes (to get a charred flavour). Season with salt and white ground pepper to taste. Add the Thai basil and stir fry briefly until everything is well incorporated, then turn off the heat.
- Transfer to your serving plates and serve with a lime wedge on the side (optional). Enjoy!
