
Ingredients
- 1.5 cups of plain flour
- 1/2 cup glutinous rice flour
- 2 eggs
- 1.5 cups milk
- 1/4 cup of water
- 1/4 cup of rice wine vinegar
- 1 cup shredded cabbage
- 1 carrot, grated
- 1 onion, finely chopped
- 2 tablespoons of olive or sesame oil
- grated ginger
- 1/2 teaspoon of ground tumeric
- pinch of salt and ground pepper
- chopped spring onions for garnish
- Kewpie mayonnaise to dress
- BBQ sauce to dress
- Peanut oil for frying
Method
- Combine all ingredients into bowl and mix lightly into a batter.
- Heat shallow pan with a splash of peanut oil.
- Off heat, put about 1/4 cup of batter into pan. Use back of spoon to shape into circle. Return to heat and cook both sides until golden.
- Dress with Kewpie mayonnaise and BBQ sauce in a lattice pattern.
- Garnish with spring onions, sesame seeds and kimchi.
